Fried Prawns In Oyster Sauce
Ingredients:
4 large prawns
150gm cornflour
1 egg
8 pieces skewers
2 cloves garlic - chopped
2 cm young ginger - sliced
20 grams spring onion - sliced
4 black mushrooms
300ml chicken stock
3 tbsp oyster sauce
1/2 tsp sugar
oil for frying
3 tbsp cornflour - dissolve in 1 1/2 tbsp water
Method:
- Slice open prawns from the back and mix them with egg and coated with cornflour. Stick skewer into prawns and deep fry in a wok with hot oil for 1-2 minutes. Set aside.
- Remove oil from wok until left 2 tablespoons and stir fry garlic until brown.
- Add ginger,spring onion and mushrooms. Add in stock,oyster sauce and sugar.
- Braise for 12 minutes. Then thicken with cornflour. Pour sauce over fried prawns
- Serve.
